Gluten Free Cherry Cobbler

This gluten free cherry cobbler has a rich, jammy filling and the simplest topping you pour over the cherries.

Ingredients 

For the filling

  • 2 cups (300 g) cherries, pitted (frozen cherries work well)
  • cup (2 2/3 fluid ounces) lukewarm water
  • ¼ cup (50 g) granulated sugar
  • 1 tablespoon (9 g) cornstarch
  • 4 tablespoons (56 g) butter

For the topping

  • 1 cup (140 g) all purpose gluten free flour blend
  • 1/2 teaspoon xanthan gum, omit if your blend already contains it
  • 1 cup (200 g) granulated sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 teaspoons vanilla extract
  • 1 cup (8 fluid ounces) whole milk, at room temperature

Instructions 

Make the filling

  • Place the cherries, water, ¼ cup sugar, and cornstarch in a medium-size, heavy bottom saucepan.
  • Cook over medium heat, stirring occasionally, until the cherries are softened and the mixture has started to thicken (5 to 7 minutes).
  • Remove the pan from heat and transfer the filling to the prepared 8x8 inch baking dish.
  • Melt butter and pour it evenly over the cherry filling in the baking dish.

Make the topping

  • In a large mixing bowl, place the flour blend, xanthan gum, sugar, baking powder, and salt and whisk to combine well.
  • Add the milk and vanilla, and mix until well-combined.

Assemble and bake

  • Pour the topping mixture over the filling in the baking dish.
  • Place in center of the preheated oven and bake until the filling is bubbling, a toothpick inserted into the topping comes out clean, and the edges are golden brown (about 30 minutes).
  • Allow to rest for about 15 minutes before serving.
