Easy Egg Salad Recipe

The 7 ingredients for this easy egg salad recipe are chopped hard boiled eggs, mayonnaise, sugar, salt, pepper, mustard and green onion!

Ingredients 

  • 6 hard boiled eggs, peeled and chopped
  • ⅓ cup mayonnaise
  • 1 teaspoon yellow mustard
  • ¾ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon sugar
  • 1 scallion, thinly sliced*

Instructions 

  • In a large bowl, stir together all ingredients.
  • Serve immediately, or place in refrigerator until ready to eat.

Notes

I didn't include the time for making the hard boiled eggs in this recipe. Each method varies on cooking time, and I know many of you make a bunch of them on the weekend to use in recipes throughout the next few days. So you could just grab some for this recipe.
This recipe can be doubled or tripled easily!
*Scallions are the same as green onions!
Food Safety Reminder: Do not leave egg salad out at room temperature. Keep chilled unless serving it. If you are bringing it to school or work, be sure to include ice packs to keep it cold. If you forget and leave your egg salad out, throw it out, as it isn't worth food poisoning!
