If you’ve missed having great hamburgers, you’ve got to try these easy gluten-free hamburger buns from my friend Rachel!
Today I welcome my friend Rachel (formerly known as Gluten Free Mama before she sold her business) with a fantastic guest post and recipe for us.
Summer means BBQ and BBQ means burgers! For good burgers, we need great tasting gluten-free hamburger buns. Mama made Gluten-free Onion Buns and Sesame Buns from my basic gluten-free hamburger bun recipe. Mama’s Basic Hamburger Bun recipe can be made as just a basic bun or you can add your favorite toppings like sesame seeds, poppy seeds, herbs, or Mama’s favorite: onions! I love to add homemade gluten-free french fried onions to mine!
To make the buns, you can use these 4″ mini round pans. They come in packs of three and you will need at least 6 pans, available at Amazon or stores like Michael’s or Target. You can also use mini quiche pans that are at least 4-5 inches in width. I made sesame seed buns using the 4 inch cake pans and I made the onion buns using the quiche pans.
Notes on Ingredients for these gluten-free hamburger buns:
- Flour: For best results, make sure you use Mama’s Almond Blend All-Purpose Gluten-free Flour or Mama’s Coconut Blend All-Purpose Gluten-free Flour.
- Xanthan gum: You’ll need to use xanthan gum as it acts as a binder in this recipe. If you use a different flour blend than the ones I’ve recommended, and the gluten-free flour blend you use already has xanthan gum or guar gum in it, then omit the xanthan gum called for in this recipe.
- Eggs: To make these egg-free, make flax eggs: Simmer 2 Tbsp. ground flaxseed with ½ cup warm water over medium low heat for about 5 minutes or until thickened. Cool. This equals 2 eggs.
Variations of gluten-free hamburger buns:
Gluten-free Onion Buns- Mix in the batter ½ cup fresh minced onion, allow to rise for 2 hours, baste top with egg white wash or warm water, then add minced onion on top of the buns.
Gluten-free Sesame Seed Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with sesame seeds.
Gluten-free Poppy Seed Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with poppy seeds.
Gluten-free Herb Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with fresh herbs. If desired, mix in two minced garlic cloves to batter.
What do you like to serve with hamburgers? Sometimes I’ll mix up a simple coleslaw to serve as a side, and some people like to add some right to their hamburgers. Another favorite side dish is this apple grape salad. It’s cool and creamy and always a hit!

Gluten-free Hamburger Bun Recipe:
Gluten Free Hamburger Buns {dairy-free too!}
Here's a basic gluten-free hamburger bun recipe that you can customize. Try out the different suggested variations to suit your taste preferences, or leave plain!
Ingredients
- 1 ¼ cups warm water
- 1 heaping Tbsp. yeast
- 3 cups Gluten-free Mama’s All-Purpose Almond or Coconut Blend Flour
- 1 ½ tsp. xanthan gum*
- 1 tsp. salt
- 3 Tbsp. sugar
- 2 eggs or Mama’s Flax Eggs, see below
- 1/3 cup canola oil or olive oil
For topping:
- 1 egg white
- 1 tsp. water
- Minced onions, herbs or seeds - *See variations below for instructions
Instructions
- In a liquid measuring cup, mix together warm water and yeast. Set aside until foamy.
- In stand mixer, add flour, xanthan gum, salt, sugar, and (minced onions for onion buns). With mixer running on low speed, slowly pour in yeast mixture, then oil, then eggs or flax eggs. Mix on high speed for 2 minutes.
- Using a 2 inch scoop, scoop heaping scoops of dough into 6-7 four inch cake pans or mini quiche pans. Run your rubber scraper under hot water, and then use it to spread and smooth out the tops of the batter. Cover with dry towel and allow to rise for about 2 hours.
- Mix together 1 egg white with 1 tsp. water and gently baste the tops of the bread. Sprinkle with desired topping, onions, sesame seeds, poppy seeds or herbs.
- Bake in 400° oven for 25 minutes. Allow to cool for at least 30 minutes before slicing and serving.
Variations
- Onion Buns- Mix in the batter ½ cup fresh minced onion, allow to rise for 2 hours, baste top with egg white wash or warm water, then add minced onion on top of the buns.
- Sesame Seed Buns – Allow to rise for two hours, baste with egg white wash or warm water, sprinkle tops with sesame seeds.

Notes
The suggested flours mentioned are all-purpose gluten-free flour blends. They are not the same as just almond flour or just coconut flour You cannot substitute regular almond flour or regular coconut flour as a straight substitution. Use the gluten-free flour blends suggested or your own favorite gluten-free flour blend.
If the gluten-free flour blend you use already has xanthan gum or guar gum in it, then omit the xanthan gum called for in this recipe.

So glad to have found this sight my grandson has been diagnosed with gluten-free egg free lactose free grains allergies so need to rethink a lot of recipes

A few years later....
I made the following flour combination at home (per 1 cup):
½ cup of brown rice flour ¼ cup of tapioca starch 3/16 cup of potato starch 1/16 cup of almond flour
Used in combination with the flax (egg) substitute and the buns taste amazing! They have a very similar texture to bread. I also used small foil pie plates as my pans, which worked really well.

I was going to make these buns, but I don't have access to your flour blend. (I'm in Canada) I bought a gluten free blend that contains the xantham gum already. Would I have to up the flour by the amount of xantham gum..or keep it the same?

Valerie, No need to adjust the flour amount called for. Just omit the xanthan gum called for in the recipe and follow the rest of the instructions the same. Happy Baking!
