Fun for breakfast or a mid-morning snack, these Neapolitan Gluten-free Parfaits combine a gluten-free chocolate muffin, fresh strawberries, and creamy vanilla yogurt! Delicious! This new recipe for gluten-free breakfast parfaits was created through this year’s partnership with Udi’s Gluten Free.
My kids eat cereal, gluten-free granola, or oatmeal every morning, and my hubby eats cereal every morning. We are all creatures of habit, and also, we’re all too lazy to make anything else!!
While I don’t get creative at all with breakfast, I enjoy getting creative with meals, snacks and desserts! I’ve been on a quest to find some more options to add variety to mid-morning and mid-day snacks this year so everyone isn’t just grabbing a granola bar every time they’re hungry.
After I made these gluten-free banana bread parfaits earlier this year, I’ve had other flavor ideas for parfaits running through my head. I keep a file on my phone where I write down various recipe ideas I come up with. A while back I added a few recipe ideas inspired by Neapolitan ice cream after the kids had that for dessert one night. One of the ideas was to make a Neapolitan flavored parfait.
While I was shopping this week, I spotted these Udi’s Double Chocolate Muffins in the freezer section of my local store. We’ve tried them before and liked them, and when I saw them, I thought they’d be perfect to use in these parfaits! I snatched them up and let them thaw overnight so I could make them the next day. They worked perfectly in these gluten-free parfaits! One muffin is enough for two parfaits, so the others are being enjoyed as is! So good!
These turned out as great as I imagined! I really enjoyed the flavor profiles of the chocolate muffin, vanilla yogurt and fresh strawberries.
Feel free to layer these as you’d prefer! Some family members enjoyed stirring it all up, some enjoyed a few that I made with thinner layers that are repeated twice. I hope you and your loved ones enjoy these too!
Neapolitan Gluten-free Parfait Recipe:
Gluten-free Neapolitan Parfaits
As written, this makes two parfaits made in jelly jars or medium drinking glasses. Just multiply the recipe for how many parfaits you'd like to make!
Ingredients
- 1 Udi's Gluten Free Double Chocolate Muffin
- 1 cup vanilla yogurt
- 8 strawberries, washed, stems removed, cut into slices
Instructions
- Using a sharp knife, cut the muffin into small cubes.
- In each jelly jar or drinking glass, layer vanilla yogurt, chocolate muffin cubes and fresh strawberries. You can make thin layers and repeat each twice if you prefer.
- Serve immediately or chill until serving.
Notes
You can substitute another type of gluten-free muffin if you can't find these Udi's chocolate muffins.

I'm loving this idea with any flavor muffin, actually! I love homemade blueberry scones or muffins with vanilla yogurt - this is just one step fancier!
